My Favorite Meal of the Day

My favorite meal of the day is breakfast. I get really grumpy if I don’t get to eat breakfast or if I have to eat it on the go. I love preparing breakfast and sitting and enjoying it. I really love eggs and I could eat them with just about anything. Eggs for breakfast, lunch, and dinner? Don’t mind if I do!

Thursday night, I was invited to my friend Jessica’s (of the Jessica L Blog) Christmas party. It was a lot of fun and I wish I could have stayed later but due to work and prep cooking, I couldn’t. Prep cooking? Well, I was making PaleOMG’s Crockpot Pork Green Chile recipe from her cookbook, “Omg. That’s Paleo?” (buy it here). My boyfriend special requested it on Sunday and I promised we would have it for dinner on Friday instead of going out to eat. I am a sweet, dedicated, loving girlfriend so I made sure I left the party as early as possible so I could go home and have a enough time to chop up the chiles and throw everything into the crockpot. (One day I’m going to do a post on my love of crockpots!)

Needless to say, he loved it. I tried making some “plantain” cakes for the pork but the plantains were too sweet and the texture was a little off. My boyfriend smiled through the plantain cakes and said how delicious everything was but I think he’s a bias critic, although I truly believed he liked the pork even though he HATES vegetables. Something I really want to work on is creating my own recipes. However, I think my first task will be to cook my way through all the wonderful cookbooks I bought and learn about ingredients and practice my cooking skills. PaleOMG’s pork recipe was good, I thought there was too much liquid in the end. I couldn’t tell if it was suppose to have that much liquid and be a soup or if I had added too much liquid to the pot. The recipe calls for two cups of liquid and I only put one because I know my crockpot magically creates a lot of liquid. Nevertheless, the pork it’s self was delicious and tender. The veggies literally melted in your mouth and the flavor was bold and spicy. Overall, it’s a recipe I would make again because it was simple and involved an easy cooking process.

So let me bring this post back to breakfast – I get off topic really easily. Too many ideas! Anyway, this morning I decided to have some of the pork with eggs. The results were yummy. I heated the pork in a pan and drained the liquid. I then beat up some eggs and poured them into the pan. I let everything set a little before mixing the egg and pork together. It created a sort of hash. It was a filling breakfast and I’ll probably make more throughout the week – there is a ton of pork after all!

Inspired Paleo Apple Crisp

Apple prepTonight, I wanted something sweet. I also wanted to use up some green apples I had purchased weeks (yes, weeks – 3 maybe?) ago. Before I continue, I have a confession. I love watching the Food Network. My current favorite show to watch is “The Pioneer Woman” and while her recipes aren’t exactly paleo (sometimes she’ll cook a steak and some veggies – TOTALLY paleo!), I like to think about how I could make them paleo. On her show the other day she made a peach cobbler and I knew I wanted to make a cobbler with the apples. I started thinking of all the ingredients I could replace in her recipe. Flour = almond flour! Milk = almond milk! However, I got lazy and decided to use my handy, dandy iPhone to search through the hard work of another paleo blogger. Then I found a paleo apple crisp recipe on The Freckled Foodie. It was like a dream come true. I replaced the sunflower seeds with toasted macadamia nuts and it turned out divine. I had some ice cream that I made  a few weeks ago stored in my freezer. As the apple crisp cooled down, the ice cream softened and I was left with perfect bites of heaven.

Apple PrepMy messy work station can be kind of dangerous. Another confession – I cook in my parent’s kitchen. I cannot wait for the day when I can cook in my own kitchen. Counter space galore! (Or so I hope)

I spent my whole childhood not being able to wait for food to cool down and then burning the roof of my mouth. I’m still curious as to how Guy Fieri can taste pizza hot out the oven without crying. The mysteries of television…

Let’s Try this Again

I’m not a stranger to blogging. In fact, I started blogging on LiveJournal when I was in high school. When I went to college, I left LiveJournal and moved to Blogger. Then I learned about Tumblr. I went back to Blogger right after that. Now I’m 26 years old and I feel this itch to blog again. This time with a purpose. What’s my purpose you ask? Well, that’s a bit complicated. See, I love food. I love food so much that I obsess over it. I think about it all the time. I remember the taste of delicious food, the smell, the way it made me feel (usually, GOOD). The problem with that is that I have struggled with my weight and my relationship with food since I was in elementary school. Two years ago, I found my strength – I found my motivation. She was hiding deep, deep down inside but when I started blogging about my weight loss, I – wait for it – LOST weight. I was responsible for checking in with myself every week, whether it was a gain or a loss. I took a picture and I wrote about what happened. That’s kind of my purpose with this. I want to be paleo – not to lose weight – but to feel better, to inspire myself more, and to most of all, challenge myself. So, let’s try this again. I want to be accountable and writing about food, working out, my day-to-day life will help me. Join me if you can! I can’t wait to share my “dreams” with you!
